What Is Dandelion?
Dandelion (Taraxacum officinale) is native to Eurasia but grows on every continent except Antarctica. The name comes from the French dent de lion — lion's tooth — for its jagged leaves. It was deliberately brought to North America by European settlers as a food and medicine plant, long before anyone thought of it as a weed.
What Dandelion Is Good For
- Liver support — the root stimulates bile production and supports the liver's natural detoxification pathways
- Digestion — a classic bitter that primes the digestive system: better appetite, less bloating, more complete digestion
- Gentle diuretic — the leaf reduces water retention while replacing the potassium most diuretics deplete

How to Use It
Roasted root "coffee": Chop, dry, and roast the root until dark and fragrant. Simmer like coffee. Rich, earthy, caffeine-free — a genuinely good morning ritual.
Root decoction: Simmer 1–2 teaspoons of dried root for 15 minutes. Drink before meals as a digestive bitter.
Leaf tea or salad: Young leaves are excellent raw in salads or lightly sautéed with garlic.
Tincture: A few drops before meals for a concentrated bitter effect.
If you harvest your own, choose plants far from roads and untreated lawns.
